Two years ago I made charitable donations, but unfortunately since I could not find the proof, I did not enter them in my tax returns to deduct from taxes, a couple of days ago I accidentally found the documents that prove the transactions, is it possible to deduct them from this year's taxes?

From what I know, you won't be able to deduct
but you might request the amendment of the tax returns, meaning, you could still claim the donation for the year it happened, only if you prove there was no way to find the documents of the donations, but there should be an objective reason for not being able to providing them to the tax office.
In your case there is no such reason, I believe (at least from the information you provided us)
